Substitution; Pancakes

After I wrote that title, I really want to call it 'Destination; Pancakes'. Then started singing that Destination Unknown song in my head, (complete with trumpets). This is irrelevant.

A big thing in my life and with how I eat is just replacing unhealthy things with healthy alternatives. Things like doing a creamy sauce with 1/3 cream 2/3 milk and cooking it longer to reduce the fat, putting Greek yoghurt on your pumpkin soup instead of sour cream and adding some water to your onions going dry when they're frying instead of extra olive oil are all things I do without even realising, (as a lot of my healthy readers would!).

But sometimes I completely change a recipe, to the point of it turning into something that has just been 'inspired by' rather than adapted, that way I can eat a super yummy food all the time without ever feeling overly full or like it should be a sometimes meal. Who wouldn't want to do that?
This is one of those meals.


Pancakes with Berries and Yoghurt




Pancakes
1 egg white
2/3 cup of wholemeal plain flour
1/2 teaspoon of cinnamon
Enough low-fat milk (or rice milk or soy milk) to make a batter.

Cook in batches in a small non-stick fry pan - no oil or butter needed.

Berries
Cook in microwave on high for 1 minute, stirring half way
(or until juicy and warm)

Yogurt
Use Greek yoghurt and sprinkle with cinnamon & a small drizzle of honey.

Serves 1, and I have no idea how many calories are in it as the only 'c' word I'll use when cooking healthy is common sense.


An alternative is grating an apple into the pancake mixture and topping the yoghurt with raisins, also very yummy.


What do you completely substitute with healthy ingredients and call a treat anyway?

My Vodka, lemonade and lime has recently turned into sparkling water and lime in the same glass as I do the Vodka, I think that's my most far-fetched one.

  1. Ahhh yes! I always make healthy substitutes without even realising. My friends think I'm a freak for always making healthy short cuts, but hey, they have beer guts and I don't, so I win. (PS Most of them are male - I don't have girlfriends with beer guts)

    The shortcuts I can think of...

    - Skim milk and olive oil in mashed potato instead of butter and cream
    - Wholemeal flour in everything where I'd normally use plain flour
    - Alternating every 2nd alcoholic drink at the pub with a glass of water
    - Using avocado on my toast instead of butter
    - Adding cinnamon/chilli/fresh herbs/pepper to food for flavour instead of butter and salt
    - Adding handfuls of grated carrot to pasta sauce to bulk it up

    And I also do the Greek yoghurt thing and the water instead of oily onion thing. I didn't even realise I did that until I read it on here! Again, not surprising to find myself nodding along to everything you've written. xx

  2. Not me, but my mum used to use left over porridge to make pancakes. You could never really taste the difference, but I'm sure they were much healthier.

  3. adrian company has this drink called frank and there is a soda water with lime, very low sugar. that with vodka is good.
    or soda water, lime and some chi is nice too.

    i am even more ridiculous with my drinks! sometimes when you having a few drinks you just want something refreshing and dont want to be sugared out! i also have my own version of a healthy pancake recipie but it has splenda in it. its sooo good.

    love the food blog. i am esp bout the food at the moment. haha always enjoying myself some new recipies, good food places etc
